Put the fries into a pot of cold water and rinse till the water is clear. We want to rinse off the excess starch. Now add ice and refrigerate at least 1 hour and up to 2 days.  Optional, you can add a teaspoon of lemon juice to prevent any discoloring.

Put the potatoes into a pot of cold, salted water and bring to a boil. When you see the first big bubbles, pull out the potatoes. Drain and rinse in cold water. This is the missed step! This makes the starch in the potatoes fluff up.

Now we need to cool and dry the potatoes. The refrigerator works really well for this. Pat dry the potatoes with a dry cloth and put in the refrigerator uncovered. The potatoes need to be cold and dry.

Fry at 325f till they form a crust and still have a blond color. Approximately 6-8 minutes. Remove from the hot oil and drain and cool for at least 15 minutes or up to 2 hours.

When it’s time to eat the perfect French fries, reheat the oil to 375f. Add the potatoes, in batches to the hot oil and cook until crispy and golden brown.

Drain on paper towels and season with salt.
